Hand-harvested stalks are stripped of tops and leaves, bundled and weighed prior to transport to the juice quality laboratory, where measurements are made to determine total fermentable sugars. Figure 3. Stalk maturity is determined by stage of ripening of the heads. The head on the right is fully mature and the other head has seed still in the soft-dough stage.
